Super Easy Healthy Treats for the Week Ahead

After all the festivities over the Christmas period we tend to overindulge with food and drink. New Year usually sends people into a state of panic to get back on the healthy bandwagon, or start a crash diet by getting rid of all sugary temptations, however we have the perfect recipe that can help curb that sweet tooth aswell as being super healthy.



Full of healthy fats, fruits and nuts, these delicious and filling Date and Pecan cookies will help you out when you’re needing that sugar fix!



To make approx. 13 cookies you will need:
-10g coconut palm sugar
-125g Organic butter or coconut oil
-1 egg
-25g buckwheat flour
-pinch salt
-1/2 tsp baking powder
-50g pecans, chopped
-50g almonds, chopped
-50g dates, chopped
Preheat oven to 160c
-Cream together the fat and sugar before mixing in the egg.
-Add the flour a little at a time. If the mixture seems a little dry, add a splash of milk.
-Mix in the dates, nuts, salt and baking powder.
-Roll the dough into small balls, then flatten to make a cookie shape. Place on an oiled tray and bake for 8-10 minutes.
